DESCRIPTION
A study program divided into 2 weeks.
The first week will be a theoretical module, which is focused on preparation for brewing and description of the brewing process.
The second week will be a practical module focused on brewing beer, from the preparation of raw materials, through production to barreling.
Basic informations about Czech Lager
(Theoretical Module)
History and Present of production of Czech lagers. Advantages of beer style and brewing differences in small and large breweries. Right and wrong process in production. What makes Czech lager the most popular beer style in the world.
Technology and ingredients
(Theoretical Module)
Choosing appropriate technology for brewing a Czech lager. Construction examples of a new brewery focused on production of Czech lagers or examples of possible technological modifications in existing brewery.
Selecting traditional czech ingredients for Czech lager or examples of the use of ingredients available abroad.
Production and Mashing Process 1/2
(Theoretical Module)
Processing ingredients, water treatment, malting, milling. Proper function of enzymes. Mashing process – and differences for making a Czech lager.
Production and Fermentation 2/2
(Theoretical Module)
Lautering, boiling, whirlpool, wort cooling. Primary fermentation. Working with yeast. Secondary fermentation in wooden barrels and in CK tanks.
Sanitation and most common mistakes
(Theoretical Module)
Sanitation and cleanliness during production, what to focus on during this process, differences between Czech lager and other beers.
The most common mistakes that only Czech brewers know and avoid, how it can affect lager batch.
Technology and ingredients
(Practical Module)
Acquaintance with the complete production technology in practice. Students will test all the equipment for the production of Czech lager. Preparing ingredients for the second day of brewing.
Brewing Process – warm process
(Practical Module)
Whole day of brewing, from the preparation of wort, mashing, lautering, boiling, whirlpool, to wort cooling and preparation for fermentation process.
Brewing Process – cold process
(Practical Module)
Fermentation and post-fermentation in CK tanks as well as traditional post-fermentation in wooden barrels, proper canning and canning technology, proper storage.
Practical examples for brewing Czech lager
(Practical Module)
How to achieve a traditional Czech lager in different conditions, real examples. Traditional ingredients / contemporary ingredients / available local ingredients. Traditional production and contemporary production. Possibilities of different approaches to the same process and its different results. Different perspectives on the same processes with questions and answers for students.
Summary and presentation of certificates (Practical Module)
Summary of all information, review of the production process of Czech lager. Discussion. Possibilities of use in practice for students.
